Banana Farofa
Banana farofa is a brazilian side dish made with toasted manioc flour and bananas:
Ingredients:
2 ripe bananas
1/4 cup butter
1/2 cup manioq flour (also called cassava flour)
Salt to taste
Chopped parsley or scallions for garnish
Instructions:
Peel the bananas and slice them into thin rounds.
Melt the butter in a large skillet over medium heat.
Add the sliced bananas to the skillet and cook until softened and lightly browned, about 2-3 minutes.
Remove the bananas from the skillet and set aside.
Add the manioc flour to the same skillet and cook, stirring constantly, until lightly toasted and fragrant, about 5-7 minutes.
Return the cooked bananas to the skillet with the manioc flour and stir until well combined.
Season the banana farofa with salt to taste.
Garnish with chopped parslley or scallions and serve hot as a side dish.
Note: You can also add other ingredients to the farofa such as bacon, onions, garlic, or olives to give it a different flavor.
Serve with picanha, feijoada, moqueca, shrimp bobó.
