Feijão Tropeiro
Feijão Tropeiro is a traditional brazilian dish made with beans, sausage, bacon, eggs, and manioq flour. Here's how to make it:
Ingredients:
1 cup dried beans, such as black or pinto beans
4 slices bacon, diced
1/2 pound smoked sausage, sliced
1 onion, diced
2 cloves garlic, minced
1/2 cup manioc flour or cornmeal
2 eggs, lightly beaten
Salt and pepper to taste
Chopped parsley for garnish
Instructions:
Soak the dried beans in water overnight, or for at least 8 hours.
Drain the beans and rinse them in cold water.
In a large pot or Dutch oven, cook the bacon over medium heat until crispy.
Add the sliced sausage to the pot and cook until browned.
Add the diced onion and minced garlic to the pot and cook until softened.
Add the soaked and rinsed beans to the pot and cover with water.
Bring the mixture to a boil, then reduce the heat to low and simmer until the beans are tender, about 1-2 hours.
When the beans are cooked, add the manioc flour or cornmeal to the pot and stir until well combined.
Add the beaten eggs to the pot and stir until the eggs are cooked and scrambled.
Season the feijão tropeiro with salt and pepper to taste.
Garnish with chopped parsley and serve hot with rice.
